a week before Easter. I’ve been to a crop with my sister, my daughter, and my
grand daughter in New Braunsfels Texas
where my sister lives. Oh what fun we had. I almost got my Christmas cards
done. Yes I do start this early on my cards.
I also got started on my December daily kit. I’m putting
together my kit from scratch, I should have it done by July when I will start
putting my book together.
(I usually have most of my gifts bought by then too!) yes I’m
that person and proud of it I love Christmas and I’m not ashamed to say it.
Anyway back to the point while we were there I signed up for
a class next month. And you’ll never guess who will be teaching the class?
Dyanne Reavley! I am so excited it’s going to be so awesome!

I'm putting this up really late
But I wanted to put it somewhere I could find it again next year. My daughter and my sister and two granddaughters, did a intagram photo a day, just for fun. I finished mine my daughter may have also I don't think she did though. But we had a ball with it.

I have a Glucose intolerance, sounds pretty innocent docent it? I've come close to dying several times. It's very hard to find things I can eat and believe me I've looked. I found this lady's blog on Face Book. There are some mighty good looking low carb recipes over there. If you get a chance go have a little look see you won't regret it.
CAULIFLOWER, CHEDDAR 'N BACON CASSEROLE
CAULIFLOWER, cheddar ‘N bacon casserole
If you are not a fan of cauli-mash, you may
actually like this instead. It's like cauli-mash on steroids. Remember my Cauliflower, Cheddar and Bacon cakes?
This casserole is based on that recipe. I love that recipe and I was
determined to try a casserole with the same ingredients.
1 medium
cauliflower
1 tbsp
olive oil (15 mL)
1/2 cup chopped white onion (125 mL)
5 slices
bacon
1 canned
jalapeno (optional)
2 eggs
1 tsp salt
(5 mL)
1/4 tsp white pepper (1 mL)
11/2 cups shredded Cheddar cheese, divided (300 mL)
1/2 tsp baking powder (2 mL)
Sour cream
(optional)
Preheat
oven to 350°F
(180°C).
In
pot of boiling water, cook cauliflower until tender. Drain in colander
over large bowl. Using potato masher, mash cauliflower in
colander and allow to sit 10 minutes to drain further.
In
small frying pan, cook onion in olive oil over medium low heat until translucent
and turning brown.
In
large frying pan, over medium heat cook bacon until crispy. Crumble and set aside. Chop jalapeno (if
using) and set aside. In small bowl, beat eggs with fork. Beat in salt and pepper.
To
cauliflower, add onion, jalapeno (if using), egg mixture, 3/4 cup (175 mL) Cheddar cheese,
Gluten-Free Bake Mix 3 and baking powder. Combine well.
Place mixture in 2 qt (2 L) shallow casserole dish. Smooth top.
Sprinkle with bacon bits and remaining Cheddar cheese. Bake 20 minutes. Serve with sour cream, if desired.
Yield: 6 servings
